It is a pleasure to be able to welcome everyone to the 35th World Vegetarian Congress. What better group to host this year’s congress than the society that has set the standard as to what it means to promote vegetarianism effectively. As the oldest vegetarian organisation in the world, the VSUK has paved the way for all other groups everywhere. It truly is the leading voice and authority on vegetarianism.
The theme chosen for this year, ‘Food for all our futures’, is a perfect choice. For no matter what reason you have for choosing a vegetarian lifestyle, you are investing in all our futures. Whether it is the future of humans, the future of the other animals that share the planet with us, or even the future of the planet itself, a vegetarian lifestyle is vital. The world is changing rapidly, but there is one consistent message coming from the medical, scientific and many other fields. The vegetarian lifestyle is the only way to go. Over the next week you will hear how the world not only must become, but is becoming a vegetarian world. Experts from around the world have gathered here to share their knowledge and wisdom. Make good use of this opportunity.

FRANCISCO MARTIN

Founder of Spain’s first animal rights organisation, Alternativa para la Liberacin Animal [ALA], Francisco has been vegan for more than three decades. On his return to Spain after living and working in Canada for many years, he founded the Spanish Vegan Society, Associacin Vegana Espaola [www.ivu.org/ave] and introduced the word ‘vegano’ into theSpanish language. Fluent in half a dozen languages, Francisco attended his first IVU congress in 1979, at Loughborough in the UK, and has spoken regularly at regional and world congresses ever since. A member of the IVU Council from 1986, he became General Secretary in 1996. From 1996 to 1999 he edited two magazines: IVU News [in English] and Veganismo [in Spanish]. His articles have been translated into several other languages [for more information and a list, see www.ivu.org/members/council/francisco-martin.html]. In 1993 Francisco singlehandedly organised the Seventh International Vegan Festival, held in Tossa de Mar – the first town in Spain to ban bullfighting. As IVU General Secretary, he also had the task of organising the 33rd World Congress, held in Thailand in 1999, the first at which all food was required to be entirely free of animal products, a requirement subsequently enshrined in the rules of IVU. The following year he stood down from the International Council to concentrate on veganising the Spanish-speaking world and was made an honorary Fellow of IVU in recognition of his services to the movement. TINA FOX
Tina Fox is currently the membership secretary for the IVU, having been elected to Council in January 1999 at Chiang Mai. She finds this very rewarding although hard work at times. She is particularly interested in helping those Societies in countries where the vegetarian movement is not well established and they have few resources. She enjoys travel and knows first hand just how frustrating it can be to find vegetarian food in an unsympathetic country. She considers herself very fortunate to be employed, as Chief Executive, by the world’s oldest and most established Society, the Vegetarian Society of the UK. Prior to this her work was in local government but her interests were always in the animal welfare and green movements. She wrote the UK Green Party’s policy on animal rights and has been a contact for most of the UK’s animal rights groups at one time or another. When time permits her interests also include gardening, reading and house restoration! .

More than 10 years ago, this doctor of health sciences designed the Coronary Health Improvement Project (CHIP), intended to help communities improve their collective health by switching to low-fat, low-sugar, low-salt, cholesterol-free, high-fibre diets. Each individual project is started in a chosen community, where anywhere from 500 to 3,000 people are recruited for a 40-hour educational program that teaches how such a diet can reverse heart disease and adult-onset diabetes, lower high blood pressure, promote weight loss and counteract depression. After running dozens of these programs, the 52-year-old author of ‘Health Power’ (Review & Herald Publishing, 2001) has established a CHIP National Centre in Rockford which sets up projects within a town’s schools, hospitals, corporations and churches. He has also been working with restaurants, grocery stores and doctors in those same communities to make sure healthy meals are available to participants and that the program is supported. The goal is to get other communities to follow suit and set up their own health improvement projects.

The Vegetarian Society of the UK takes great pleasure in welcoming you to the 35th World Vegetarian Congress. The first world vegetarian congress was held in Dresden, Germany in 1908. The VSUK has been involved with IVU throughout its history and the first world congress held in England was in Manchester in 1909. Since then congresses have been held in Britain in 1926,1947,1965 and 1979.
In Britain we have a proud vegetarian history and were the first country in the world to have a vegetarian society. Interest in diet and animal welfare grew through time and by the early 19th century there was increasing concern. In 1847 a group of vegetarians met at a health hydro in Kent and formed the Vegetarian Society. Since that time there has continuously been a national vegetarian society in Britain. The media give daily attention to the vegetarian message and seek help and advice from the Society.
Edinburgh is noted for its attractive architecture and friendly welcome to visitors. We hope you will seize the opportunity to get to know the city and fully participate in the congress activities. Thank you for helping to make this a memorable and successful congress.

NIKOLAI KALANOV
Президент «Евразийского вегетарианского общества» Каланов Николай отвечает на вопросы делегатов Международного вегетарианского конгресса в Эдинбурге 2002 г.
Nikolai Kalanov from Moscow has a background in engineering and law and is a member of the International Federation of journalists. He is the author of four books (including ‘Who are vegetarians? Questions and answers’) and 40 articles on history and linguistics. As president of the Eurasian Vegetarian Society (EVS) he is the chief editor of ‘Vegetarianec’ journal. He began reading vegetarian literature in 1992, with the aim of curing heart disease, and this broadening of his knowledge led to the idea of creating the journal (the first issue of ‘Vegetarianec’ journal saw the light in May 2001) and the society (EVS was created in May 2001) for Russian vegetarians. The main objectives of EVS are to promote vegetarianism through mass media; organisation and support of vegetarian societies in various cities of Russia and CIS; environmental protection; popularisation of vegetarianism as an important component for the healthy way of life.
